
Every Single Pot Still whiskey barrel in the Camino Collection has been distilled by Pearse Lyons Distillery using Irish malted and unmalted barley, alongside select adjunct grains; double-distilled on our Vendome Pot Stills; and matured in Ireland under our team’s careful supervision in a range of select cask types. Our Single Cask–Single Pot Still program features whiskeys produced exclusively after the renovation of St. James’s Church, when the distillery officially opened. These whiskeys were distilled onsite on the altar of St. James’s Church from 2017 onward, within Dublin 8’s historic Golden Triangle district. Since 2021, all our production has focused on using home-grown grain from the 120-acre Lyons family farm, located just 25 km from the distillery.
