Every Single Malt whiskey barrel in the Camino Collection is distilled by Pearse Lyons using 100% Irish malted barley, double-distilled on our Vendome pot stills, and matured in Ireland under our team’s careful supervision in a range of select cask types. Our Single Cask–Single Malt program features two distinct distillates: the rare Carlow distillate, produced in Carlow between 2012 and 2015 on our Vendome stills before the renovation of St. James’s Church was completed and the distillery officially opened and our Dublin distillate, produced onsite from 2017 onward following the church’s restoration, within Dublin 8’s historic Golden Triangle district. Together, these distillates tell the story of the distillery’s evolution, with each single cask expressing a distinct chapter in its journey.
